This isn't a chewy cookie like I normally share. Instead this cookie is more crisp, and packed with flavor and goodies! Here is a big "HI" for my gram right now. My Gram and Gramp have moved into "town" have speedy internet and a new computer, so she is able to keep up with my blogging and facebook page now. Thanks for being such an amazing baker Gram!!!
Hope you all love her cookies as much as her Buttermilk Pancakes I shared a few months ago!
Gram's Coconut Crisps
1 cup butter, softened
1 cup oil
1 cup light brown sugar
1 cup granulated sugar
1 egg
2 tsp. vanilla
1 tsp. coconut flavoring (I omited since I could not find this in the stores!)
3 1/2 cup flour
1 tsp. salt
1 tsp. soda
1 tsp. cream of tartar
1 cup oatmeal
1 cup chocolate chips
1 cup coconut
1 cup Rice Krispies
Preheat oven to 350 degrees. Mix together flour, salt, baking soda, and cream of tartar. Set aside.
In large bowl, cream together butter, oil and sugars. Add egg, vanilla, and coconut flavoring. Add flour mixture one cup at a time, mixing well after each addition. Stir in oatmeal, chocolate chips, coconut and Rice Krispies. Mix until well combined.
Using small cookie scoop, drop dough onto cookie sheet. Bake for 15 minutes.**
**Gram's note is "Do not over brown", so I baked for 15 minutes exactly, and they were at a golden color, and are perfection. Store in airtight container. Or do like Gram did and freeze them and you will be ready whenever you need a cookie!

I make a similar cookie, but haven't used coconut flavoring. I bet they're really good, thank you for sharing.

These do look good and I also have never used the coconut flavoring.
ReplyDeleteThese sound yummy! I bet the rice krispies make the cookies really crunchy and delicious. Thanks for sharing this famous recipe :)
ReplyDeleteDear Sugar Cookies to Peterbilts, I followed you back from your visit to my blog and found your yummy cookies and and heartwarming story. I am a grandma now and each Monday two of my granddaughters spend the day with me. We cook and bake, do puzzles, read books, talk and laugh. I am going to add your recipe to our collection. I have started using coconut oil in my baking. I wonder if you made these with half coconut oil...would the flavor be more like Grams?
ReplyDeleteYum! These look amazing. I'm in love with coconut cookies so i will definitely give these a try :D

Love, love, love coconut! You could always try coconut oil in place of the oil for a bit of that coconut flavor. Thanks for sharing on the Foodie Friends Friday Linky Party. Hope to see you back again next week!

My mom made a similar cookie.. Thanks for sharing on Foodie Friends Friday and want to let you know that this recipe is my host favorite. It will be featured over at the Daily Dish Magazine tomorrow and on my blog during next week's party. Love this recipe and your story.
ReplyDeleteI've found that coconut oil enhances crispness in cooking.. although it doesn't add the coconut flavor.. it's neutral tasting. I hear it's one of the healthier oils, though.
